Frankopan platter

Ingredients (serves 4):

  • 800 g venison prosciutto

  • 400 g bear prosciutto

  • 80 g wild boar sausage

  • 120 g škripavac cheese (traditional fresh cow’s cheese)

  • 80 g homemade smoked cheese

  • 40 g fresh cheese

  • 4 olives

  • 1 tablespoon sour cream

  • a pinch of salt

  • 4 slices of fresh tomato

  • fresh parsley for garnish

Preparation:
Slice the prosciutto and sausages thinly. Cut the škripavac and smoked cheese into small wedges. Mix the fresh cheese with sour cream and a pinch of salt, then shape into a small ball.

Arrange the sliced prosciutto, sausage, and cheeses on a serving platter. Place the cheese ball in the center. Garnish with olives, tomato slices, and a sprig of parsley.


Recommended drink pairings:
Red wine – Blaufränkisch (Frankovka)
White wine – Pinot Gris
