Porcini mushroom soup

Ingredients (serves 4):

  • 8 g dried porcini mushrooms

  • 100 g fresh porcini mushrooms

  • 50 g pork lard

  • 100 g onion

  • 1 bay leaf

  • 100 ml white wine

  • 1 garlic clove

  • salt and pepper to taste

  • fresh parsley

  • 40 g flour

  • 200 g potatoes

  • 1 liter vegetable stock

Preparation:
Soak the dried porcini mushrooms in warm water. In a pot, sauté finely chopped onions in hot pork lard until translucent. Add the whole garlic clove and bay leaf.

Once the onions are soft and beginning to turn into a purée, add the chopped fresh and soaked porcini mushrooms, as well as diced potatoes.

Sauté everything gently over low heat, deglaze with white wine, and cook until the wine evaporates and only the aroma remains. Then sprinkle with flour, stir briefly, add the vegetable stock, and continue cooking until all ingredients are tender and the soup has a creamy texture.

Garnish the soup with chopped parsley and serve with a dollop of sour cream.
